Ha! I just realized my kC-friendliest recipe-- well, recipes, really. See, I'm not as good at eating my veggies as I probably should be, but roasted vegetables? I'm all about that.
Roasted Green Beans
Hardware:
Baking sheet
Aluminum foil
Software:
1 lb. fresh green beans, washed & stems trimmed
olive oil
salt
pepper
-Preheat oven to 450
-toss green beans with two tablespoons of oil, and a couple of pinches of salt
-arrange in single layer on foil-lined baking sheet
-bake for 8-10 minutes
-shake tray to redistribute beans, grind some pepper onto beans, bake for another 6-10 minutes until beans are browned
-serve immediately
The beans come out like french fries, dried out and crispy and a little sweet. I can seriously eat a pound of green beans this way. For extra credit, sprinkle a teaspoon or so of truffle oil onto the beans. =9
