Most of us would break an egg using a blunt edge, like the edge of a counter or side of a bowl. From the episode using cookies I was watching, there's a better way: use a flat surface, like a cutting board or an ordinary counter. The crack will be better, and it's ideal if the recipie calls for a yolk without the white.
