If you Watch X, it kinda serves as an Alternate aftermath to the UC Timeline. Along with Turn A, being a more Subtle but equally epic show.
SEED is like a Fangirls wet dream remake of the Original Gundam. I'm serious about that. They reuse a lot of action scenes, the characters are two dimensional, and If you watch the Original Gundam and Zeta Gundam...well the series becomes predictable and pretty much defeats the purpose of the show, unless you want to watch the show for its "Teen Drama" and Teenage Angst crap.
Plus theres TOO MANY GUNDAMS. Kinda defeats the purpose of what makes a Gundam so stand out when EVERYONE HAS ONE.
G Gundam is a departure from Classic Gundam as its not really a Real Robot show, but its full of Action and some romance subplots. Pretty much a series of HOT BLOOD.
00 Was quite good, at least the First Season was more on a realism perspective, Second season is more out there because now what made the Main characters stand out so much was now ALL OVER THE WORLD.
Wing is another Attempt to give a shout out to the past series, but it became popular because of the Main Character (Fangirl syndrome once more) and then the movie Endless Waltz became overrated of the Gundam Designs, especially the "Angelic" looking Zero Custom.
