Chrono Trigger. I've beaten it nearly fifteen times over the years (including New Game+) and it is by far my favorite RPG ever. The plot, while simplistic, is entertaining, the characters are charming, the battle system is amazing, and the music is godly.

I'd definitely say that my favorite RPG series thus far is the Tales of series. I would say the Shin Megami Tensei: Persona sub-series, but I'm not a fan of the first two games' a bit, mechanic wise.

Final Fantasy pre(and including)10. JRPGs have somehow managed to get worse since then.

Sadly these days I haven't completed many RPG's even though I have a massive backlog of them. I'd probably have to go with the Tales Series as Symphonia is still one of my personal favorite games. However there are a few lesser known titles I'd like to suggest if you don't mind.
1. SRW/SRT OG Saga: Endless Frontier - Pretty much this game is a JRPG fans dream come true. It's over the top, crazy and turns pretty much everything up to 11 except the fan service which goes beyond the impossible. It's a shame we never got the sequel here but then again just getting the first game was amazing enough.
2. Hyper Dimension Neptunia - I still need to finish this one, but long and short imagine the console wars as fought by goddesses personifying the various consoles and companies. Yeah this is pretty fan service heavy as well and the battle system has some serious issues, but if you're an old school gamer try and give this one a shot as the writing makes the game enjoyable enough as it is. Also the sequel is coming this year!
As for Chrono Cross... I did beat the game and I have to say while the plot was confusing yet interesting my biggest issue was the damn level up system. To me it made the game unreasonably hard, a reason I don't like FFXIII. However Miguel wins my nomination for one of the best bosses ever for the setup and music of that fight alone, even though it was hard as hell and took several retries I still to this day love the set up and would play the game alone for that scene.
