I'd say just about any Super Robot style anime. Modern anime loves to parody that stuff. I can't really elaborate but I've seen a good amount of references in anime I've watched before.

What did Black Jack and Detective Conan influence?

Cowboy Bebop comes to mind... after that I saw heightened animation value, more stylized direction aaannnnd.... I dunno, every slick hardboiled hero in the modern age seemed to follow in its footsteps.

Even though IT drew its inspiration from Lupin III.

This is it right here, except for the Conan part. Conan is good. Lupin the Third should be there.

Mobile Suit Gundam is way more influential and popular

That show tanked in Japan.

Yu-Gi-Oh seemed to be giving birth to a card game anime genre. There was Duel Masters (Brought over to the US as a parody show), Card Liver (So obscure I have trouble watching episodes), and that Battle Spirits franchise that's going strong. Probably still in the infant stages and can die quickly, but if it doesn't...

There's also Cutie Honey, which helped give birth to the Magical Girl genre (I think I remember reading something where the author was baffled by that effect)

Cutie honey is an android not a magic girl

There's Skull Man for the anti-hero as well.

Skull Man may have come first, but Kikaider's Hakaider was where the concept really took off.
