For me, I know quite a few shows now so I'll have to go back to the beginning of my addiction:
1: Uchuu Senkan Yamato. This was the first anime I ever bought. I remember finding info about it online at a time when I was really big into Military History. I thought SBY was a slap in the face of all the men who died because I was thinking it was a comedy or didn't have the right to usurp something that once existed. This was just as I was getting into Anime. My friend who worked at Suncoast got me the VHS sub of the 1st compliation movie for Yamato. When I got done, I was blown away and felt like I had just witnessed something not of this planet As a result, this will always hold a special place in my heart.
2. Ronin Warriors/Yoroiden Samurai Troopers. I remember watching them on TV back in the early-mid 90's and thought it was a great cartoon show that was much better than all the stuff I had seen from Warner & Disney. However, thanks to my introduction with Yamato, I found out that this was in fact an Anime and was one of the few in that time that was more or less faithfully translated from the Japanese with no real cuts. I've always enjoyed watching that show, even in the Dubbed form for nostalgia.
Anything beyond that is pretty much going into grey territory so I'll just stick with these two.
