Star Trek XII casting question

Two characters from the original series that wasn't in Star Trek "XI" were transporter yeoman Janice Rand & Nurse Christine Chapel. If there characters were in the upcoming sequel, who would you cast for the two?

I'm pretty sure Chapel was in the last film. I remember McCoy called for her when he was trying to sneak Kirk aboard the Enterprise and his hands started to inflate.
