All the old Riders, of course.

I haven't seen every last classic Ultraman, but I have seen most, and they're all pretty good. The original, Seven (especially), later Return, Ace & Leo being particular highlights.

The 70's Ishinomori classics (Kikaider & 01, Henshin Ninja Arashi, Robot Detective, Inazuman & Flash, Daitetsujin 17, Zubat.)

Older Sentai- I haven't seen enough in full but they're always interesting. And if nothing else, episode 1 of Goranger is one hell of a first 10 minutes.

The Toei 60's stuff (Giant Robo, Captain Ultra, Akakage)

Supergiant(s) aka Starman- old as it gets, but amazing. Not really a show so much as a series of short films, edited together into four longer films in the US. Watch the English-dubbed versions, Starman's voice is awesome and I like how they keep recycling the "alien council meeting" scene every time. It becomes a sort of strange psuedo-opening, and I missed it watching the original versions!
 
Fireman, Ultraman Leo, Choujin Barom-1, Kikaider, Goranger

I'm surprised no one mentioned Fireman yet. That series OWNS!
 
Space Giants (Magma Taishi), Jonny Sokko (Giant Robo), and Spectreman molded my childhood (along with Ultraman's 1966 series).

Older yet is stuff like Akuma Kun, Kappa No Sanpei, and Ultra Q.

I also enjoy Captain Ultra, Lion Maru, Kikaida and all of the "other" Ultraman stuff (I liked Ace a lot - it got quite strange at times).

And if you ever find the movie "Daigoro vs Golius" (spelling?) - don't miss it! It's VERY Silly!! (I like silly)

There's lot of shows from the past that are good. My recommendation, though, it's the Metal Hero franchise. But i would say that most of the "old" shows are worthy to watch. I mean, all the Ultra series of 60s/70s are good. Kamen Rider was really Kamen Rider in those years. Watch everything you can put your hands on, in the end :-)
