Are there any item that contains wood that the New Yankee Workshop host Norm Abram won't build? Like a violin?

I'm sure he's commited himself in fixing/creating house related things. Asking him to do a violin is like asking him to make a piano from scratch.

Building a violin is an entire profession onto itself.

I agree with Eldar. The art of making a violin, or any other wood instrument, is a dedicated craft. While Norm maybe a master craft's man the fact is he does not specialize in the art of making musical instruments.
