Video Conversion Fu - Why's My Encode So Bad?

So... like I've posted a couple times before, for some reason my computer and 360 don't like the new format my One Piece episodes are in from 340 on. Not sure what new fansubber wiz-bang they put on it to make it more difficult to watch, but.... seems the only way around it is to convert it into something else.

I've tried AVI and MPEG II so far and each time it comes out the other end a pretty far cry from the HD majesty I've been enjoying up to this point.

Is there a reason for my drop in quality and how do I get the best picture quality from my converts?

You might find some helpful information here.

You might need to upgrade your video codecs on your computer.

You might want to try a different video converting program. Or do a higher bitrate on you video output.

Maybe too the people making the fansub might have changed to a higher video bitrate. Could be anything nowdays!!!
