That scene is tasteless and disrespectful but that is his vision. People can make their own movies that can be a rebuttal to his. There are films that have portrayed Bruce Lee more respectably. I will watch just watch those movies instead. Tarantino does have a history of Asians being jobbers in his movies. Kill Bill is one of the most specific example I can give.
